Simple Chicken Enchiladas

Ingredients
  • 6 c. shredded cooked chicken {About 2 lbs. boneless chicken breasts and/or thighs OR 1 whole chicken. I oft utilization a fully-cooked rotisserie chicken.}
  • 2 T. butter
  • 1 large onion, chopped
  • 1 (4 oz.) can diced greenish chilies, undrained
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 10 flour tortillas* {approximately 9-inch size}
  • 4 c. shredded cheddar cheese
  • 1 (28 oz.) can enchilada sauce {OR 1 batch homemade enchilada sauce}
  • chopped cilantro and/or crumbled queso fresco for garnish {optional}
Directions
  1. Melt butter inwards a saute pan over medium heat. Add onion too laid upwardly until softened, virtually five minutes. Add greenish chilies, shredded chicken, salt, too pepper; stir until good combined. Remove from heat.
