Is anyone else already thinking of the sandy beaches too sweetness sunshine of summer? I know I certain am. And am counting downward the days to our household unit of measurement beach opor-garai inward a few weeks.
I am, though, fully aware it's even too then a calendar month away until the official starting fourth dimension of summer. So what's a ready-for-the-beach wishing-it-was-summer daughter to produce equally she waits for warmer days too Sun rays? Do some summertime wishin' through her food, of course!
Like past times enjoying the refreshingly delicious, scream-of-summer flavors of this Pineapple-Pecan Chicken Salad that I of late whipped upwards for lunch.
Chicken salad is ane of my favorite luncheon foods. Since I swallow it too then often, I mix it upwards amongst lots of dissimilar variations ... similar my favorite Tarragon Chicken Salad, or Traditional Southern Chicken Salad, or even Tzatziki Chicken Salad ... you've gotta change it up, right?
And I totally beloved this pineapple too pecan variation.
This version has such a nice, refreshing flavour amongst the sweetness of all the pineapple inward it accompanied past times the wonderful compaction of pecans. But it's not too sweet, yous know what I mean? The pineapple tidbits convey a lightness to the chicken salad ... without beingness overpoweringly sweet. It's ane chicken salad that merely begs to last eaten inward the oestrus of summer.
But believe me, piece it may last merely perfect for summertime eating, the wonderful flavors of Pineapple-Pecan Chicken Salad are fabulous to taste any time!
Pineapple-Pecan Chicken Salad

Ingredients(Printable recipe)
- 3 c. chopped cooked chicken breasts
- 1 c. finely chopped celery
- 2 green onions, sliced (about iii T.)
- 2 T. finely chopped greenish pepper
- 1 tsp. salt
- dash of dark pepper
- 1/2 c. mayonnaise
- 1/2 c. chopped pecans
- 1 (20 oz.) can pineapple tidbits, drained
- 2 T. lemon juice
- Combine chicken, celery, greenish onion, greenish pepper, salt, dark pepper, too mayonnaise inward a bowl; mix well. Stir inward pecans, pineapple, too lemon juice.
- Chill for nearly xxx minutes earlier serving to let flavors to meld.
