Mocha Cream Pie

Move over chocolate cream pie!  Coffee's got yous all jazzed upward together with turned yous into ridiculously delicious Mocha Cream Pie ... amongst a java together with chocolate custard filling, within an Oreo crumb crust, all topped amongst java whipped cream.  It'll brand you boot manifestly chocolate cream pie to the curb, too.


Perhaps I should bring used decaf to brand this pie.  Allow me to explicate ...

I don't drinkable coffee.  Not a drop.

In fact, I drinkable rattling picayune caffeine at all.  In whatever form.

Not because I don't similar caffeine.  But because caffeine doesn't similar me.  Caffeine affects me a lot.  Like, if I drinkable a Diet Coke around 10:00 inwards the morning, I'll bring a difficult fourth dimension falling asleep at 10:00 that night!  For real.  And I am bouncing off the walls.  My hubby tin say inwards an instant if I've been drinking anything amongst caffeine ... fifty-fifty if it's hours later.  Oh, delight say me I'm non the solely 1 who can't grip my caffeine!

So when I ate the entire slice of this pie at the halt of the pie's photograph shoot, it was not a proficient choice.

But there's to a greater extent than explanation required equally to why ...


... together with that has to produce amongst the idiosyncrasies of nutrient photography.

See, somehow ... together with I don't claim to bring any agreement what-so-ever of how ... infinite  and size seem to get, well, quite distorted when photographing food.  To 'look right,' things to a greater extent than oftentimes than non ask to live actually unopen together ... together with plates ask to live really total ... together with bowls of materials ask to live super heaped up.

And pieces of pie ask to live big.

So that slice of pie yous run across on the plate inwards these photos is a really big slice of pie.

That I ate.

At almost 2:00 inwards the afternoon.

Fortunately this pie's coffee-and-chocolate custard filling ... within an Oreo crumb crust ... topped off amongst java whipped cream ... is together with then ridiculously proficient it's worth a black of express sleep.

But adjacent fourth dimension ... together with ooohhhhhhh, in that place will live a adjacent time, ... I intend I'll purpose decaf.




Mocha Cream Pie

Ingredients
Crust:
  • 2 c. finely crushed Oreos
  • 1/2 c. butter, melted
Mocha Filling:
  • 2/3 c. granulated sugar
  • 1/4 c. cornstarch
  • 2 T. instant java crystals
  • 2 c. half-and-half
  • 4 egg yolks
  • 2 oz. semi-sweet chocolate squares, chopped
  • 2 T. butter
Coffee Whipped Cream:
  • 2 c. whipping cream
  • 1 T. coffee liqueur (I purpose Kahlua)
  • 1/4 c. granulated sugar
Directions
  1. FOR THE CRUST: Stir together crushed Oreos together with melted butter until good combined. Press into the bottom together with upward the sides of a 9-inch pie plate coated amongst non-stick cooking spray. Bake at 350 degrees for 10 minutes. Cool completely.
  2. FOR THE MOCHA FILLING: In a saucepan, whisk together granulated sugar, java crystals, together with cornstarch. In a bowl, whisk together half-and-half together with egg yolks. Whisk egg mixture into saccharide mixture a picayune at a time.
  3. Bring saccharide together with egg mixture to a boil over medium heat, whisking constantly. Once mixture begins to boil, boil for 1 minute, whisking constantly. Remove from heat.
  4. Melt semi-sweet chocolate squares (over depression oestrus inwards a minor saucepan or inwards the microwave on high for almost 1 minute). Add melted chocolate together with the 2 tablespoons butter to the saccharide mixture inwards the saucepan together with whisk in. Spoon into prepared cooled crust.
  5. Place plastic twine withdraw onto the surface of the pie filling (this helps preclude a celluloid from forming). Refrigerate for at to the lowest degree four hours to chill completely.
  6. FOR THE COFFEE WHIPPED CREAM: Chill a large mixing bowl together with the beaters of an electrical mixer (or whisk attachment of a stand upward mixer) inwards the fridge for almost fifteen minutes. Remove from the fridge together with pour the whipping cream together with java liqueur into the chilled bowl. Beat on medium-high speed until foamy. Gradually add together granulated sugar; crunch on high speed until soft peaks form.
