Sweet-&-Spicy Pork Tenderloin Amongst Mango Salsa


For this month's Eating the Alphabet challenge (letters M, N, or O), I chose to portion amongst y'all 1 of our family's go-to recipes.  This Sweet-&-Spicy Pork Tenderloin amongst Mango Salsa is 1 of our absolute, absolute, absolute favorites.  Hmmmm ... nosotros similar it in addition to thence much, perchance it deserves near 50 absolutes.  But I'll halt at three.  You larn the point.

I had been making the pork tenderloin role of this dish for years ... when my Mom came upward amongst the vivid see of pairing it amongst Mango Salsa.  Brilliant, I say.  Genius!  It's such a wonderful combination.

Sweet-&-Spicy Pork Tenderloin amongst Mango Salsa

Ingredients
Sweet-&-Spicy Pork Tenderloin:
1/4 c. packed brownish sugar
ii T. apple tree cider vinegar
1 T. tomato plant paste
1 tsp. seat down cumin
1 1/2 tsp. chili powder
1/4 tsp. seat down dark pepper
1 (1 lb.) pork tenderloin

Mango Salsa:
3 c. cubed peeled ripe mango (about 2-3 mangoes)
1 c. chopped light-green onions
1/2 c. chopped fresh cilantro
3 T. finely chopped seeded jalapeno
1 tsp. sugar
1/2 tsp. salt
1/3 c. fresh lime juice



Directions
Prepare the Mango Salsa:
1.  Combine all mango salsa ingredients inward a bowl in addition to toss well.  Cover in addition to chill for near xxx minutes earlier serving.

Prepare the Pork Tenderloin:
2.  Combine brownish sugar, cider vinegar, tomato plant paste, cumin, chili powder, in addition to dark pepper inward a shallow dish; mix well.  Add pork in addition to plow to coat all sides.  Cover in addition to marinate inward the fridge for 1 hour.
