Clam Chowder Amongst Greens {A Lighter Ne Clam Chowder Option}


The thick together with creamy goodness of New England manner clam chowder, chock sum of clams, cream, together with tender potatoes ... it's ane of my favorites.  But, I felt it necessary to notice a lower-fat, lower-carb, healthier version to brand at habitation that didn't possess the commons post-bowl guilt I felt later indulging inwards it's rich yumminess.

Clam Chowder amongst Greens

Ingredients
1/4 lb. (about five slices) turkey bacon
1 T. olive oil
1 large onion, finely chopped
1 garlic clove, minced
vi T. flour
iv c. (about 12 oz.) chopped turnip or other greens
ii (14 1/2 oz.) cans chicken broth
three (10 oz.) cans chopped clams, juice reserved
1 c. milk or half-and-half
1/4 tsp. dark pepper

Directions
1.  Drain clams, reserving the juice.

2.  Chop bacon; laid inwards a large saucepan over medium-low oestrus until crisp.  Drain on a newspaper towel together with laid aside.

3.  Add olive stone oil to the same pan, together with thence add together onion together with garlic.  Cook, stirring occasionally, until onion is translucent, nearly 8-10 minutes.  Add flour together with laid together with stir nearly 1 minute, coating onions amongst the flour.  Add chopped greens together with laid nearly ii minutes. 

4.  Stir inwards chicken broth together with reserved clam juice.  Bring to a simmer over medium oestrus together with laid for nearly 10 minutes.  

5.  Stir inwards milk or half-and-half together with oestrus through.  Stir inwards dark pepper, clams, together with turkey bacon; laid for 1-2 minutes more.

Note:  I unremarkably role a combination of turnip greens together with mustard greens.
