Roasted Butternut Squash Chili
Ingredients
- 1 small butternut squash, peeled & seeds removed
- 2 T. olive oil
- 3/4 tsp. salt
- 1 large onion, chopped
- 2 red, orange, or xanthous bell peppers, chopped
- 2 cloves garlic, minced
- 2 (14.5 oz.) cans diced tomatoes, undrained
- 2 T. chili powder
- 1 tsp. ground cumin
- 1 tsp. ground cinnamon
- 1/4 tsp. ground allspice
- 1 tsp. granulated sugar
- 1/2 c. water
- 1 (15.5 oz.) can dark beans, drained & rinsed
- 1 (15.5 oz.) can night crimson kidney beans, drained & rinsed
- grated cheddar cheese
- chopped dark-green onions or chives
- Heat oven to 400 degrees. Cut crush into 1/2-inch cubes. Place crush cubes on a large rimmed baking sheet; toss amongst 1 tablespoon of the olive fossil oil as well as 1/4 teaspoon of the salt. Bake for xxx minutes, stirring 1 time amongst a large spatula. Set aside.
