Roasted Butternut Squash Chili

Ingredients
  • 1 small butternut squash, peeled & seeds removed
  • 2 T. olive oil
  • 3/4 tsp. salt
  • 1 large onion, chopped
  • 2 red, orange, or xanthous bell peppers, chopped
  • 2 cloves garlic, minced
  • 2 (14.5 oz.) cans diced tomatoes, undrained
  • 2 T. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground allspice
  • 1 tsp. granulated sugar
  • 1/2 c. water
  • 1 (15.5 oz.) can dark beans, drained & rinsed
  • 1 (15.5 oz.) can night crimson kidney beans, drained & rinsed
  • grated cheddar cheese
  • chopped dark-green onions or chives
Directions
  1. Heat oven to 400 degrees. Cut crush into 1/2-inch cubes. Place crush cubes on a large rimmed baking sheet; toss amongst 1 tablespoon of the olive fossil oil as well as 1/4 teaspoon of the salt. Bake for xxx minutes, stirring 1 time amongst a large spatula. Set aside.
