Pork Tenderloin & Pimento Cheese Crostini Melts

Pork tenderloin too pimento cheese, broiled together too topped alongside crumbled bacon.  These Pork Tenderloin and Pimento Cheese Crostini Melts are 1 real tasty agency to relish pimento cheese.


Southerners loooooooove their pimento cheese!  Even transplanted Southerners, similar me.  But I accept to acknowledge ... it is one of those things I had never fifty-fifty heard of until I moved South.  When my brother's mother in law ... a truthful Southern lady ... asked me if I liked pimento cheese, I had no earthly persuasion what she was talking about.  I'm super glad that I do now.

And at 1 of our {former} local restaurants, I discovered this incredibly delicious agency to relish pimento cheese.

Backwoods Cafe, 1 of my favorite local restaurants that unfortunately latterly closed, introduced me to these Pork Tenderloin & Pimento Cheese Crostini Melts.  That's non actually what they called them ... I made that lift up.  'Cause they didn't actually telephone outcry upward them anything.  Not that I remember, anyway ... So I had to lift them something.

But I digress.

The eating theater served each soul at the tabular array 1 of these at the start of the meal.  Nice petty loose appetizer, right?    

Just expect at all that oozy, melty pimento cheese.  Yum.


When Backwoods Cafe closed, I simply had to recreate these tasty petty beauties at home.

So, I started alongside a baguette too cutting it into slices almost 1/2-inch thick.


I toasted 1 side of the baguette slices a petty combat nether the broiler ...


... hence turned the baguette slices over too pose on a spell of cooked-and-sliced pork tenderloin.


You could purpose whatever recipe for the pork tenderloin, but I used ...


... my favorite Sweet-&-Spicy Pork Tenderloin.  It's marinated inwards a mixture of dark-brown sugar, chili powder, too basis cumin, which gives it a actually yummy sweet/spicy flavour ... that paired simply fabulously alongside the pimento cheese.

Next I slathered on a generous dollop of prepared pimento cheese ...


You can make your ain pimento cheese or purchase commercially prepared at the grocery store.  If yous purchase it, I highly, highly, highly recommend Palmetto Cheese made yesteryear Pawley's Island Specialty Foods.  It's the absolute best commercially prepared pimento cheese I've e'er had.  Seriously.  {And they're not paying me to nation that.}


Then popular it all nether the broiler for a duad of minutes until the pimento cheese gets all oozy, gooey, too melty.  Mmmmmm.

Finally, sprinkle it alongside a petty combat of crumbled bacon too chopped parsley.  'Cause, yous know, bacon makes everything better.  And parsley makes everything pretty.

Pork Tenderloin & Pimento Cheese Crostini Melts

Ingredients
  • 1 demi-baguette (approximately 12-inch long baguette breadstuff loaf)
  • 1 lb. pork tenderloin, cooked too sliced
  • 3/4 c. prepared pimento cheese (most of a 12 oz. container)
  • 2 slices bacon, cooked too crumbled
  • 1 T. finely chopped parsley
Directions
  1. Slice the baguette into roughly xiv slices, each 1/2-inch (or a petty less) thick. Place on a sail pan or broiler pan; broil 1 side for almost 2 minutes or until simply initiatory of all to plough lightly browned on the edges. Remove from the oven too plough each baguette spell over on the pan.
  2. Place a spell of pork tenderloin on transcend of the un-broiled side of each baguette slice. Top each pork spell alongside a generous dollop of pimento cheese. Broil for roughly 2 minutes, or until the cheese is melted too bubbly. Remove from the oven.
  3. Sprinkle each crostini alongside crumbled bacon too chopped parsley.
