I discovered the beauty of slab pies final Thanksgiving flavor when I turned our family-favorite pumpkin pie into Pumpkin Slab Pie.  At first, members of the solid unit of measurement were skeptical.  Just what is  a slab pie? ... about thought.

Well quite simply, slab pie is a shallow pie made inwards a rimmed baking canvas or jelly curl pan.  It's got all the deliciousness of its traditionally-made counterpart ... alone thinner.  And wider. 

Which has about wonderful benefits when it comes to large feast meals or cooking for a crowd.

For the bakery slab pies = to a greater extent than servings per pan.  When cutting into triangles every bit shown inwards my photos, this pan yields 24 servings.  That makes feeding a crowd a snap!

For the eater slab pies = thinner filling together with to a greater extent than flexibility inwards choosing your serving size.  Which agency the nigh of import affair of all when it comes to large feast meals ... y'all tin easily notice room inwards your breadbasket to indulge inwards to a greater extent than than 1 dessert!

So this Thanksgiving season, I decided to plow my Mom's pecan pie into Pecan Slab Pie.

Mom's pecan pie has been a family-favorite for years.  But it's a tad chip dissimilar than nigh pecan pies ... because the filling is made amongst Jell-o vanilla pudding ... the cooked sort ... inwards it.

This may audio a chip strange, but believe me, it creates a real tasty filling!  The dry out pudding mix is whisked together amongst the commons corn syrup together with eggs to create the same custardy-type filling every bit traditional pecan pie, but it creates a filling that's non quite every bit syrupy-sugary-sweet every bit many pecan pies tin be.

I wondered if Mom's filling would last to create a tasty slab pie.  And truthful to cast for me, I gave it a try.

I'm happy to study the respond is a resounding yes!

To create the slab pie version's filling, I made 1 & 1/2 times Mom's recipe for traditional pie.  So if you'd similar to effort to brand a slab pie amongst your favorite pecan pie filling instead of Mom's, I recommend increasing your gene amounts to brand 1 & 1/2 "batches" of your recipe.

Pecan Slab Pie
(Printable recipe)
Ingredients
  • prepared crust for a 2-crust pie
  • 1 large (4.6 oz) bundle Jell-o create & serve vanilla pudding
  • 1 1/2 c. light corn syrup
  • eggs, lightly beaten
  • 1 1/4 c. evaporated milk {not quite all of a 12 oz. can}
  • 2 1/2 c. pecan halves {I purpose two cups pecans halves + 1/2 loving cup chopped pecans}
Directions
  1. Line a 15x10" rimmed baking canvas amongst aluminum foil; lightly spray amongst non-stick cooking spray. Fit both crusts into the bottom together with upwards the sides of the baking pan, cutting pieces together with plumbing equipment together every bit needed. Press together seams good amongst your fingers. Fit a slice of aluminum foil on last past times of the crust. Bake at 375 degrees for 8 minutes. Remove from oven together with withdraw foil.
  2. While crust bakes, whisk together dry out pudding mix together with corn syrup. Gradually add together evaporated milk together with eggs, whisking to fully contain afterward each addition. Stir inwards pecans.
  3. Place baking pan amongst crust on oven rack. Carefully pour inwards pecan filling together with spread evenly over crust.
  4. Bake at 375 degrees for xxx - 35 minutes until filling is laid together with golden brown. Cool on a rack. Cover together with chill at to the lowest degree three hours earlier serving. Store inwards the refrigerator.
  5. At serving time, garnish amongst whipped cream, if desired.
NOTE:
