Roasted Sweet Potato & Sausage Quiche

Ingredients
  • 2 large sweetness potatoes

  • 1/2 c. pre-cooked turkey sausage crumbles
  • 1 small onion, thinly sliced inward rounds
  • 2 T. julienned fresh sage leaves
  • 1 c. heavy cream
  • 1 c. half & half
  • 2 egg yolks
  • 2 whole eggs
  • 1/2 c. grated Parmesan cheese
  • 4 oz. goat cheese, crumbled
  • 1 T. extra virgin olive oil
Directions
  1. Bake sweetness potatoes (in their skins) until tender, most 1 hr as well as fifteen minutes at 350 degrees. Cool.
