This twelvemonth for Christmas Eve dessert, Mom decided nosotros would conduct keep a 'pie bar.'  Each of us ladies inwards the menage unit of measurement was to convey a pie.  How fun is that??

Except I had the.  hardest.  time.  deciding what pie I was going to bring.  I simply couldn't pick from all the amazing pie ideas around!  Finally ... together with I produce hateful finally, afterward most 2 weeks of staring at my pile of pie recipes ...

... I landed on this Black Bottom Peanut Butter Icebox Pie, which I adapted from Southern Living magazine.  (According to Southern Living, it was supposed to hold out Peanut Butter-Banana Icebox Pie, run into ... but I simply wasn't feelin' the bananas.  I know, Elvis would hold out disappointed.  Oh well.)

We had such a bully pie line-up!  Mom made 2 pies, of course of didactics (... produce you lot run into where I instruct my baking põrnikas from?) ... Pecan Pie together with my absolute favorite Chocolate Cream Pie, 2 of her solid specialties.  

There was Coconut Pie.  There was Pumpkin Pie.  And my 16-year-old niece made a Cheesecake Pie ... her get-go contribution to our menage unit of measurement Christmas Eve dinner!  (She's growing into such a wonderful immature lady.  I can't believe she's xvi already.  Sniff, sniff.)


I tried to convince Mom to permit me cutting into her pies earlier Christmas Eve dinner therefore I could accept pictures.  But she was a no-go alongside that.  And afterward dinner ... well, let's simply tell in that place wasn't much left to move with.

Now alongside my pie, I snuck a slice out together with did a quick photograph shoot earlier everyone arrived.  (Oh, together with therefore Mom together with I proceeded to consume the photograph shoot piece.  Ya know, appetizer-style.  Hmmmm ... piece Mom was opposed to cutting into the pies for photos, she clearly wasn't opposed to devouring the photograph model.  Interesting.)

I'm happy to study all my pie agonizing was worth it ... this low-cal together with fluffy peanut butter pie, alongside a yummy layer of chocolate ganache hiding betwixt the peanut butter mousse filling together with crust, was totally scrumptious.

Even though I know Elvis would hold out disappointed alongside no bananas, nosotros certain weren't.




Black Bottom Peanut Butter Icebox Pie

Ingredients
Crust:
  • 2 c. graham cracker crumbs
  • 1/4 tsp. ground cinnamon
  • 1/2 c. finely chopped honey-roasted peanuts
  • 1/2 c. butter, melted
'Black Bottom' Ganache:
  • 1/2 c. semi-sweet chocolate chips
  • 1/3 c. whipping cream
Peanut Butter Filling:
  • 1 (8 oz.) package cream cheese, softened
  • 1 c. creamy peanut butter
  • 1/2 c. brown sugar
  • 2 tsp. vanilla extract
  • 1 2/3 c. whipping cream, divided
Toppings (optional):
  • sweetened whipped cream
  • chocolate syrup
  • chopped honey-roasted peanuts

Directions
Prepare the Crust & 'Black Bottom' Ganache:
  1. Stir together the graham cracker crumbs, Earth cinnamon, finely chopped honey-roasted peanuts, together with melted butter. Lightly spray a 9-inch pie plate alongside non-stick cooking spray. Firmly press the graham cracker crumb mixture into the bottom together with upwards the sides of the pie plate.
  2. Bake at 350 degrees for 10 - 12 minutes, until lightly browned. Remove from the oven together with cool completely (about xxx minutes).
  3. Combine chocolate chips together with 1/3 loving cup whipping cream inwards a microwaveable bowl. Microwave on medium/50% ability for most 1 1/2 minutes until chocolate is almost melted, stirring every xxx seconds. Whisk until the chocolate melts together with the mixture is smooth. (Do non overheat the chocolate.)
  4. Spread chocolate mixture evenly over the bottom of the prepared crust.
Prepare the Peanut Butter Filling:
  1. Beat cream cheese, peanut butter, brownish sugar, together with 1/4 loving cup of whipping cream alongside an electrical mixer at medium speed until mixture is low-cal together with fluffy, most iv minutes.
  2. Beat remaining whipping cream together with vanilla extract at high speed until strong peaks form. Fold most one-third of the whipped cream into the peanut butter mixture to loosen it up; therefore crease inwards the remaining whipped cream.
